Rajidesigns Supercookie--3  I think I’m pretty decisive about most things, but dessert is not one of them.  Since I try to keep my desserts to a minimum, I take my sweet time choosing the ‘perfect’ one.  Luckily, this ‘supercookie’ satisfies every possible dessert craving out there, including peanut butter, oats, raisins, walnuts, pretzel bites, cinnamon, and chocolate chips!  Now you and I don’t (hopefully!) have to choose–we can have it all.  Hope you enjoy! INGREDIENTS

  • 3 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup natural chunky or creamy peanut butter (or PB chips)
  • 1 cup sugar
  • 1 cup (packed) light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups semisweet or bittersweet chocolate chips (12 ounces)
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup pretzels, broken into 1’–2′ pieces

PREPARATION

  • Whisk oats, flour, baking soda, spices, and salt in a large bowl. Using an electric mixer, beat butter, peanut butter, and sugars in another large bowl on medium speed until combined. Add eggs and vanilla and beat until completely smooth. With mixer on low speed, gradually add dry ingredients and mix just to combine. Stir in chocolate chips, raisins, walnuts, and pretzels. Wrap dough in plastic and chill for at least 2 hours or overnight.
  • Preheat oven to 350°. Coat baking sheets with nonstick spray. Using a spoon, drop rounded tablespoonfuls of dough about 2″ apart onto prepared baking sheets (12–14 cookies should fit on each sheet).
